
I am feeling a cooking groove again.
Back in the day, I wanted to be a professional chef. I thought I would attend the Culinary Institute of America in NYC and dance as a Radio City Rockette on the side. Needless to say that dream never materialized, but during that fantasy infused time in my life I cooked a lot.
My mom loved that phase.
I can remember making home made sweet and sour chicken, ravioli from scratch with homemade dough to boot, and pesto sauce. I began collecting cookbooks and really had a passion for making meals.
In more recent times, I completely lost that passion for cooking. Most nights in PDX consisted of something I could eat straight from the fridge or something I could grab from the freezer, pop in the microwave and enjoy in front of the TV.

Because we do not have a microwave or a freezer, our choices are to cook something or eat out every single night.
So I cook.
Sometimes we even eat at the table.
At the same time.
::gasp!::
Tonight's fare was Chicken Pad Thai. I had one packet of Pad Thai seasoning left from the states, so I sauteed some chicken in EVOO, added the prepared sauce and lay it over a bed of some fun hollow pasta that I found at Kaufland. The pasta component would have been better if I was able to get some kind of rice noodles or asian noodles, but I didn't have any. I diced some green onions and crushed some peanuts and sprinkled both on top. Voila!
